It's Greek for Me

Tonight Chelsea and I, along with her cousin Claire and Claire's boyfriend Sean, attended a cooking class at PCC, a fancy Seattle grocery store (or "natural market", if you will). We had a really fun time! The food featured was Greek, as I'm sure you gathered from the title. We learned how to make spanakopita, an appetizer made of flaky dough filled with a spinach & cheese mixture. Then we learned how to make tzatziki, a yogurt-cucumber-dill dip which pairs well with pita bread. Chels was a little apprehensive to try the dessert, galactoboureko, which turns out to be a delicious custard, almost bread pudding, type of filling inside layers of phyllo dough (which happens to be the same dough used in the spanakopita, but with a much different taste!). Chelsea actually liked it--way to be adventuresome, honey! :) We also learned how to make a tasty baked-bean dish called fasolia yiahni, made with multiple veggies, cannellini beans, and olive oil. And as a side note - Chelsea only was able to complete 1 of her 3 essential showering steps due to a sudden lack of hot water. Not cool. Not cool at all. (*Might have something to do with Candace washing dishes at the same time...oops).
